  • 2 1/2 cups (310 g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup (240 ml) apple cider
  • 1/2 cup (120 ml) sour cream or plain yogurt
  • 2 cups (about 2 medium) peeled and diced apples
  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (60 g) unsalted butter
  • 3 tbsp heavy cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves.
  3. In a large bowl, cream the softened unsalted butter with granulated sugar and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, apple cider, and sour cream or plain yogurt.
  4. Gradually mix the dry ingredients into the wet mixture alternately with the apple cider and sour cream, starting and ending with the dry ingredients. Fold in the peeled and diced apples.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 45-50 minutes, checking for doneness with a toothpick.
  6. While the cake cools, prepare the caramel glaze by combining brown sugar, unsalted butter, and heavy cream in a saucepan over medium heat, stirring until smooth. Remove from heat and stir in vanilla extract.
  7. Once the cake has cooled slightly, pour the warm caramel glaze over the top and allow it to set before slicing.
