Ingredients
- All-purpose flour – 2 cups (240 g)
- Granulated sugar – 1 cup (200 g)
- Brown sugar – 1/2 cup (100 g), packed
- Baking powder – 1 teaspoon
- Baking soda – 1/2 teaspoon
- Salt – 1/2 teaspoon
- Ground cinnamon – 2 teaspoons
- Apple cider – 1 cup (240 ml)
- Eggs – 2 large
- Vegetable oil – 1/2 cup (120 ml)
- Butter – 1/2 cup (113 g), softened
- Powdered sugar – 2 cups (240 g)
- Ground cinnamon – 1 teaspoon
- Milk – 2 tablespoons (30 ml), or as needed for consistency
- Vanilla extract – 1 teaspoon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
- In a large mixing bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, mix the wet ingredients: apple cider, eggs, and vegetable oil until fully blended.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- While the cupcakes are baking, prepare the cinnamon frosting by beating softened butter until creamy, then gradually adding powdered sugar and ground cinnamon, followed by milk and vanilla extract until fluffy.
- Once the cupcakes are cool, frost them generously with the cinnamon frosting and sprinkle with ground cinnamon if desired.
