Description

Ingredients

  • 2 1/2 cups (310g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120ml) plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1 cup fresh or frozen cranberries
  • Zest of 1 orange

For the orange glaze:

  • 1 cup (120g) powdered sugar
  • 23 tbsp fresh orange juice
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the Bundt pan by greasing it and dusting with flour.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, then mix in yogurt and vanilla.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Then fold in the apples, cranberries, and orange zest.
  5. Pour the batter into the prepared Bundt pan and smooth the top.
  6. Bake for 50-55 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 10-15 minutes.
  7. Prepare the orange glaze by whisking together powdered sugar, orange juice, and vanilla until smooth.
  8. Invert the cake onto a wire rack, let it cool completely, and then drizzle the orange glaze over the top.
