A moist and flavorful cake combining apples, pecans, and warm spices, topped with rich brown sugar frosting.

- 2 cups (250g) all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- 2 large eggs
- 1/2 cup (120ml) plain yogurt or sour cream
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1/2 cup (60g) chopped pecans
For the Brown Sugar Frosting:
- 1/2 cup (115g) unsalted butter
- 1/2 cup (100g) brown sugar, packed
- 2–3 tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round or square cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in yogurt and vanilla.
- Gradually fold in the dry ingredients until just combined. Gently fold in the diced apples and chopped pecans.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, melt butter in a saucepan, stir in brown sugar and milk, and bring to a simmer for 2-3 minutes. Remove from heat and stir in vanilla.
- Once the cake is completely cool, drizzle the warm frosting over the top and let it flow down the sides.
Notes
- Use firm and slightly tart apples like Granny Smith for the best flavor.
- Store the cake in an airtight container to keep it fresh.
- For gluten-free, substitute all-purpose flour with a gluten-free blend.
