Description

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs
  • 1/2 cup (120ml) plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/2 cup (60g) chopped pecans

For the Brown Sugar Frosting:

  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (100g) brown sugar, packed
  • 23 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in yogurt and vanilla.
  4. Gradually fold in the dry ingredients until just combined. Gently fold in the diced apples and chopped pecans.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. For the frosting, melt butter in a saucepan, stir in brown sugar and milk, and bring to a simmer for 2-3 minutes. Remove from heat and stir in vanilla.
  8. Once the cake is completely cool, drizzle the warm frosting over the top and let it flow down the sides.

Notes

  • Use firm and slightly tart apples like Granny Smith for the best flavor.
  • Store the cake in an airtight container to keep it fresh.
  • For gluten-free, substitute all-purpose flour with a gluten-free blend.
