- 1 1/2 teaspoons baking powder

- 115 g (1/2 cup) unsalted butter, softened
- 150 g (3/4 cup) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) milk
- 2 medium apples (about 200 g), peeled, cored, and grated
- 100 g (1 cup) pecans, roughly chopped
- 60 ml (1/4 cup) pure maple syrup (for drizzle)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined. Gently fold in the grated apples and chopped pecans.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the maple drizzle by measuring out the maple syrup and warming it slightly if desired.
- Once the cake is baked, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the warm maple syrup over the top before serving.
