Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt
  • 115 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml (1/2 cup) milk
  • 2 medium apples (about 200 g), peeled, cored, and grated
  • 100 g (1 cup) pecans, roughly chopped
  • 60 ml (1/4 cup) pure maple syrup (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined. Gently fold in the grated apples and chopped pecans.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the maple drizzle by measuring out the maple syrup and warming it slightly if desired.
  7. Once the cake is baked, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Drizzle the warm maple syrup over the top before serving.
