- 200g (1 cup) dried apricots, chopped
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 150g (1 1/4 cups) all-purpose flour
- 50g (1/2 cup) almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- Zest of 1 orange
- 100ml (1/2 cup) orange juice
- 50g (1/4 cup) slivered almonds
For the Sticky Orange Drizzle, you will need:
- 80g (1/3 cup) sugar
- 60ml (1/4 cup) orange juice
- 1 tbsp butter
- 1/2 tsp orange zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round pan by greasing it with butter and lining the bottom with parchment paper.
- In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Whisk until well mixed.
- Cream together the softened unsalted butter and brown sugar in a large mixing bowl until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
- Gradually fold the dry ingredients into the butter mixture until just combined.
- Gently fold in the chopped dried apricots and slivered almonds.
- Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, checking for doneness with a toothpick.
- While the cake is baking, prepare the orange drizzle by combining sugar, orange juice, butter, and orange zest in a small saucepan. Heat until the sugar dissolves and the mixture thickens slightly.
- Once the cake is baked, let it cool for 5-10 minutes, then pour the warm orange drizzle over it. Serve warm or at room temperature.

- Choose plump and moist dried apricots for the best flavor.
