Description

A delightful Apricot Almond Cake topped with a luscious orange drizzle, combining sweet, chewy apricots with nutty almond flour.


Ingredients

  • 200g (1 cup) dried apricots, chopped
  • 150g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150g (1 1/4 cups) all-purpose flour
  • 50g (1/2 cup) almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 orange
  • 100ml (1/2 cup) orange juice
  • 50g (1/4 cup) slivered almonds

For the Sticky Orange Drizzle, you will need:

  • 80g (1/3 cup) sugar
  • 60ml (1/4 cup) orange juice
  • 1 tbsp butter
  • 1/2 tsp orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round pan by greasing it with butter and lining the bottom with parchment paper.
  2. In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Whisk until well mixed.
  3. Cream together the softened unsalted butter and brown sugar in a large mixing bowl until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
  5. Gradually fold the dry ingredients into the butter mixture until just combined.
  6. Gently fold in the chopped dried apricots and slivered almonds.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, checking for doneness with a toothpick.
  8. While the cake is baking, prepare the orange drizzle by combining sugar, orange juice, butter, and orange zest in a small saucepan. Heat until the sugar dissolves and the mixture thickens slightly.
  9. Once the cake is baked, let it cool for 5-10 minutes, then pour the warm orange drizzle over it. Serve warm or at room temperature.
