Blueberry Chia Jam is a delightful and healthy spread made from fresh blueberries and chia seeds, using chia seeds as a natural thickener.
Ingredients
- Fresh blueberries: 2 cups (about 300 grams)
- Chia seeds: 1/4 cup (about 40 grams)
- Honey or maple syrup: 1/4 cup
- Lemon juice: 1 tablespoon (freshly squeezed)
- Water: 1/4 cup (optional)
- Pinch of salt: to taste
Instructions
- Prepare the blueberries by rinsing them under cold water and removing any stems or leaves. Mash them lightly in a medium saucepan.
- Cook the blueberries over medium heat, adding honey or maple syrup, lemon juice, and a pinch of salt. Stir and cook for about 5-7 minutes.
- Add chia seeds to the cooked blueberries and stir well. Optionally, add water for a thinner consistency.
- Let the mixture sit for 10-15 minutes to thicken as the chia seeds absorb the liquid.
- Transfer the jam to a clean glass jar and allow it to cool before sealing. Store in the refrigerator for up to two weeks.
