- 2 large eggs

- 1 teaspoon ground cinnamon
- 1/4 cup caramel sauce (plus extra for drizzling)

Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and a pinch of salt in a medium bowl. Press into the bottom of a greased 9×9-inch baking pan.
- Bake the crust for 8-10 minutes until lightly golden. Let it cool slightly.
- In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Toss diced apples with ground cinnamon in a separate bowl.
- Fold the cinnamon-coated apples into the cheesecake mixture.
- Pour the cheesecake and apple mixture over the cooled crust and drizzle with caramel sauce.
- Bake for 30-35 minutes until the edges are set and the center is slightly jiggly. Let cool at room temperature for 30 minutes.
- Chill in the refrigerator for at least 2 hours before cutting into squares and drizzling with additional caramel sauce.
