Description

A delicious and moist Caramel Date Cake topped with a rich walnut glaze, perfect for any occasion.


Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 150 g (3/4 cup, packed) brown sugar
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) milk
  • 200 g (1 1/2 cups) chopped dates
  • 1 teaspoon vanilla extract

For the walnut glaze, you will need:

  • 60 g (1/4 cup) unsalted butter
  • 80 g (1/2 cup) brown sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 50 g (1/2 cup) chopped walnuts

Instructions

  1. Prepare the dates by soaking them in hot water for 10 minutes and then mashing them lightly.
  2. Mix the dry ingredients (flour, baking powder, baking soda, salt, and brown sugar) in a large bowl.
  3. In another bowl, whisk together the eggs, melted butter, milk, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients, then gently fold in the soaked and mashed dates.
  5. Pour the batter into a prepared 8-inch round cake pan and bake at 350°F (175°C) for 40 to 45 minutes.
  6. While the cake cools, prepare the walnut glaze by melting butter and mixing in brown sugar and milk.
  7. Stir in vanilla extract and chopped walnuts into the glaze.
  8. Once the cake is cool, drizzle the walnut glaze over the top and let it set before slicing.
