A delicious and moist Caramel Date Cake topped with a rich walnut glaze, perfect for any occasion.
Ingredients

- 200 g (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 150 g (3/4 cup, packed) brown sugar
- 2 large eggs
- 115 g (1/2 cup) unsalted butter, melted
- 120 ml (1/2 cup) milk
- 200 g (1 1/2 cups) chopped dates
- 1 teaspoon vanilla extract
For the walnut glaze, you will need:
- 60 g (1/4 cup) unsalted butter
- 80 g (1/2 cup) brown sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 50 g (1/2 cup) chopped walnuts
Instructions
- Prepare the dates by soaking them in hot water for 10 minutes and then mashing them lightly.
- Mix the dry ingredients (flour, baking powder, baking soda, salt, and brown sugar) in a large bowl.
- In another bowl, whisk together the eggs, melted butter, milk, and vanilla extract.
- Fold the wet ingredients into the dry ingredients, then gently fold in the soaked and mashed dates.
- Pour the batter into a prepared 8-inch round cake pan and bake at 350°F (175°C) for 40 to 45 minutes.
- While the cake cools, prepare the walnut glaze by melting butter and mixing in brown sugar and milk.
- Stir in vanilla extract and chopped walnuts into the glaze.
- Once the cake is cool, drizzle the walnut glaze over the top and let it set before slicing.

- Use fresh Medjool dates for the best flavor and texture.
