  • 1 tablespoon vegetable oil
  • 1 bell pepper, diced
  • 1 medium carrot, finely diced
  • 3 scallions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • 1 head of iceberg or butter lettuce
  • Optional toppings: chopped peanuts, cilantro, or sesame seeds

Instructions

  1. Prepare the ingredients by washing and dicing the vegetables.
  2. In a large skillet, heat the vegetable oil over medium-high heat, then sauté the minced garlic and ginger for 30 seconds.
  3. Add the ground chicken to the skillet, breaking it apart as it cooks until browned and fully cooked (5-7 minutes).
  4. In a small bowl, mix the soy sauce, hoisin sauce, and sesame oil to create the sauce.
  5. Stir in the diced bell pepper, carrot, and chopped scallions to the cooked chicken, cooking for an additional 3-4 minutes.
  6. Pour in the prepared sauce, stir to combine, and season with salt and pepper to taste.
  7. Assemble the wraps by placing a spoonful of the chicken mixture in a lettuce leaf and rolling it up.
  8. Serve with a bowl of dipping sauce and optional toppings.
