Description

Chicken Parmesan Zucchini Boats are a healthier twist on the classic Chicken Parmesan dish, featuring fresh zucchinis filled with ground chicken, marinara sauce, and melted cheese.


Ingredients

  • 4 medium zucchinis
  • 1 lb (450 g) ground chicken
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil or parsley, chopped

Instructions

  1. Wash the zucchinis and cut them in half lengthwise. Scoop out the seeds and some flesh, leaving about 1/4 inch around the edges.
  2. Heat olive oil in a skillet over medium heat, add minced garlic, and sauté for about a minute.
  3. Add ground chicken, Italian seasoning, salt, and black pepper to the skillet. Cook for 6-8 minutes until browned and fully cooked.
  4. Stir in marinara sauce and reserved zucchini flesh, cooking for an additional 2-3 minutes.
  5. Preheat the oven to 375°F (190°C). Spoon the chicken mixture into the prepared zucchini halves and top with mozzarella and Parmesan cheese.
  6. Bake for 25-30 minutes until zucchinis are tender and cheese is melted and bubbly.
