- 4 medium zucchinis
- 1 lb (450 g) ground chicken
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh basil or parsley, chopped
Instructions
- Wash the zucchinis and cut them in half lengthwise. Scoop out the seeds and some flesh, leaving about 1/4 inch around the edges.
- Heat olive oil in a skillet over medium heat, add minced garlic, and sauté for about a minute.
- Add ground chicken, Italian seasoning, salt, and black pepper to the skillet. Cook for 6-8 minutes until browned and fully cooked.
- Stir in marinara sauce and reserved zucchini flesh, cooking for an additional 2-3 minutes.
- Preheat the oven to 375°F (190°C). Spoon the chicken mixture into the prepared zucchini halves and top with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until zucchinis are tender and cheese is melted and bubbly.
