Ingredients

  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) strong brewed coffee, cooled
  • 60 ml (1/4 cup) milk or cream
  • 1 teaspoon vanilla extract
  • 100 g (1 cup) sliced almonds, lightly toasted

For the coffee drizzle:

  • 60 ml (1/4 cup) strong brewed coffee
  • 50 g (1/4 cup) powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the wet ingredients: eggs, melted butter, cooled coffee, milk or cream, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Fold in the toasted sliced almonds, pour the batter into the prepared pan, and smooth the top.
  6. Bake for 40–45 minutes, checking for doneness with a toothpick.
  7. While the cake bakes, prepare the coffee drizzle by whisking together brewed coffee and powdered sugar until smooth.
  8. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before drizzling with the coffee mixture.
