Description

A delicious and moist chocolate cake made with sweet dates and crunchy walnuts, perfect for any occasion.


Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 50 g (1/4 cup) unsweetened cocoa powder
  • 150 g (3/4 cup, packed) brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) strong brewed coffee or hot water
  • 1 teaspoon vanilla extract
  • 150 g (1 cup) pitted dates, chopped
  • 100 g (1 cup) walnuts, chopped

Instructions

  1. Chop the pitted dates into small pieces and soak in warm water if dry.
  2. Chop the walnuts coarsely and optionally toast them.
  3. In a large bowl, mix the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat the eggs and mix in the melted butter, coffee, and vanilla extract.
  5. Combine the wet and dry ingredients gently, being careful not to overmix.
  6. Fold in the chopped dates and walnuts until evenly distributed.
  7. Pour the batter into a prepared cake pan and smooth the top.
  8. Bake in a preheated oven at 350°F (175°C) for 40 to 45 minutes.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve the cake, enjoying it with coffee or tea.

  • Medjool dates are recommended for their softness and sweetness.
  • Store leftovers in an airtight container at room temperature for up to three days.
