A delicious and moist chocolate cake made with sweet dates and crunchy walnuts, perfect for any occasion.
Ingredients

- 200 g (1 1/2 cups) all-purpose flour
- 50 g (1/4 cup) unsweetened cocoa powder
- 150 g (3/4 cup, packed) brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 115 g (1/2 cup) unsalted butter, melted
- 120 ml (1/2 cup) strong brewed coffee or hot water
- 1 teaspoon vanilla extract
- 150 g (1 cup) pitted dates, chopped
- 100 g (1 cup) walnuts, chopped
Instructions
- Chop the pitted dates into small pieces and soak in warm water if dry.
- Chop the walnuts coarsely and optionally toast them.
- In a large bowl, mix the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs and mix in the melted butter, coffee, and vanilla extract.
- Combine the wet and dry ingredients gently, being careful not to overmix.
- Fold in the chopped dates and walnuts until evenly distributed.
- Pour the batter into a prepared cake pan and smooth the top.
- Bake in a preheated oven at 350°F (175°C) for 40 to 45 minutes.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve the cake, enjoying it with coffee or tea.
Notes
- Medjool dates are recommended for their softness and sweetness.
- Store leftovers in an airtight container at room temperature for up to three days.
- For gluten-free options, substitute all-purpose flour with a gluten-free blend.
