Description

Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 50 g (1/4 cup) unsweetened cocoa powder
  • 150 g (3/4 cup, packed) brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) milk
  • 1 teaspoon vanilla extract
  • 150 g (1 cup) chopped dates
  • 100 g (1 cup) chopped hazelnuts, toasted

For the toffee sauce, you will need:

  • 100 g (1/2 cup) unsalted butter
  • 100 g (1/2 cup) brown sugar
  • 60 ml (1/4 cup) heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8-inch (20 cm) round cake pan or a loaf pan by greasing it and lining the bottom with parchment paper.
  3. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat the eggs, then add the melted butter, milk, and vanilla extract, mixing until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined, then fold in the chopped dates and toasted hazelnuts.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 45–50 minutes, checking for doneness with a toothpick.
  7. While the loaf is baking, prepare the toffee sauce by melting the butter in a saucepan, adding brown sugar, and stirring until dissolved. Then stir in the heavy cream and vanilla extract.
  8. Once the loaf is baked, let it cool for 10 minutes in the pan before transferring it to a wire rack. Drizzle the warm toffee sauce over the cooled loaf before serving.

Notes

  • Use Medjool dates for the best flavor and texture.
  • Store leftovers wrapped tightly at room temperature for up to three days or freeze for longer storage.
  • For gluten-free, substitute all-purpose flour with a gluten-free blend.
  • For vegan, replace eggs with flaxseed meal or chia seeds and use plant-based butter and non-dairy milk.
