- 200 g (1 2/3 cups) all-purpose flour
- 50 g (1/2 cup) unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 200 g (1 cup) unsalted butter, softened
- 200 g (1 cup) brown sugar, packed
- 3 large eggs
- 120 ml (1/2 cup) milk
- 120 ml (1/2 cup) hot coffee or water
- 1 teaspoon vanilla extract
For the Molasses Frosting:
- 100 g (1/2 cup) unsalted butter, softened
- 200 g (1 cup) powdered sugar
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk, if needed
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and dusting it with flour.
- In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk, hot coffee (or water), and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined and smooth.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add powdered sugar, mixing until smooth. Stir in molasses and vanilla extract, adjusting consistency with milk if needed.
- Once the cake is completely cool, frost it generously with the molasses frosting using a spatula.
