Description

Ingredients

  • 200 g (1 2/3 cups) all-purpose flour
  • 50 g (1/2 cup) unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 200 g (1 cup) unsalted butter, softened
  • 200 g (1 cup) brown sugar, packed
  • 3 large eggs
  • 120 ml (1/2 cup) milk
  • 120 ml (1/2 cup) hot coffee or water
  • 1 teaspoon vanilla extract

For the Molasses Frosting:

  • 100 g (1/2 cup) unsalted butter, softened
  • 200 g (1 cup) powdered sugar
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk, if needed

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and dusting it with flour.
  2. In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk, hot coffee (or water), and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined and smooth.
  5. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  6. For the frosting, beat the softened butter until creamy, then gradually add powdered sugar, mixing until smooth. Stir in molasses and vanilla extract, adjusting consistency with milk if needed.
  7. Once the cake is completely cool, frost it generously with the molasses frosting using a spatula.
