Description

A delightful Cinnamon Swirl Pumpkin Loaf with a creamy glaze, perfect for fall.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/4 cup milk
  • 1/3 cup (65 g) brown sugar
  • 1 tsp ground cinnamon
  • 1 cup (120 g) powdered sugar
  • 23 tbsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger.
  3. In a large bowl, cream the softened unsalted butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree.
  4. In a small bowl, combine the brown sugar and ground cinnamon for the swirl.
  5. Gradually mix the dry ingredients into the wet mixture, alternating with the milk, until just combined.
  6. Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon swirl mixture over it, add the remaining batter, and finish with the rest of the cinnamon mixture. Swirl gently with a knife.
  7. Bake for 50-60 minutes, checking for doneness with a toothpick.
  8. While the loaf is baking, prepare the cream glaze by whisking together the powdered sugar, milk or cream, and vanilla extract until smooth.
  9. Once the loaf has cooled for about 10 minutes, transfer it to a wire rack and allow it to cool completely before drizzling the cream glaze over the top.
