Description

A delightful cake that combines the sweetness of dates with the tartness of cranberries, topped with a zesty orange glaze.


Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pitted dates, chopped
  • ½ cup dried cranberries
  • ¾ cup boiling water
  • ½ tsp baking soda (for dates)
  • Zest of 1 orange

For the orange glaze, you will need:

  • 1 cup (120g) powdered sugar
  • 23 tbsp fresh orange juice
  • ½ tsp orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, mix together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a large mixing bowl, cream the softened unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Add the chopped dates (with soaking liquid) and dried cranberries along with the orange zest to the wet mixture.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared cake pan and bake for 35 to 40 minutes, or until a skewer inserted into the center comes out clean.
  7. While the cake is baking, prepare the orange glaze by whisking together the powdered sugar, fresh orange juice, and orange zest until smooth.
  8. Once the cake has cooled completely, drizzle the orange glaze over the top and allow it to set before slicing.
