A delightful cake that combines the sweetness of dates with the tartness of cranberries, topped with a zesty orange glaze.

- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder

- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pitted dates, chopped
- ½ cup dried cranberries
- ¾ cup boiling water
- ½ tsp baking soda (for dates)
- Zest of 1 orange
For the orange glaze, you will need:
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh orange juice
- ½ tsp orange zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, mix together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
- In a large mixing bowl, cream the softened unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Add the chopped dates (with soaking liquid) and dried cranberries along with the orange zest to the wet mixture.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared cake pan and bake for 35 to 40 minutes, or until a skewer inserted into the center comes out clean.
- While the cake is baking, prepare the orange glaze by whisking together the powdered sugar, fresh orange juice, and orange zest until smooth.
- Once the cake has cooled completely, drizzle the orange glaze over the top and allow it to set before slicing.
