Ingredients
- Ground Beef: 1 lb (450 g)
- Taco Seasoning: 1 packet (1 oz or 28 g)
- Diced Tomatoes: 2 cups (480 ml)
- Black Beans: 1 can (15 oz or 425 g)
- Corn: 1 cup (150 g)
- Elbow Macaroni: 8 oz (225 g)
- Cream Cheese: 8 oz (225 g)
- Shredded Cheddar Cheese: 1 cup (100 g)
- Green Onions: 2, sliced
- Water or Beef Broth: 1 cup (240 ml)
Instructions
- Prepare your ingredients by gathering and chopping any vegetables.
- Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper.
- Combine the browned beef with taco seasoning, diced tomatoes, black beans, corn, elbow macaroni, and water or beef broth in the crockpot.
- Set the crockpot to cook on low for 4-5 hours or high for 2-3 hours, stirring occasionally.
- About 30 minutes before serving, add softened cream cheese and stir until melted, then top with shredded cheddar cheese and let it melt.
- Serve warm, garnished with sliced green onions.
Notes
- For a spicier version, add jalapeños.
- For a vegetarian option, substitute ground beef with black beans or lentils.
