Ingredients

  • Ground Beef: 1 lb (450 g)
  • Taco Seasoning: 1 packet (1 oz or 28 g)
  • Diced Tomatoes: 2 cups (480 ml)
  • Black Beans: 1 can (15 oz or 425 g)
  • Corn: 1 cup (150 g)
  • Elbow Macaroni: 8 oz (225 g)
  • Cream Cheese: 8 oz (225 g)
  • Shredded Cheddar Cheese: 1 cup (100 g)
  • Green Onions: 2, sliced
  • Water or Beef Broth: 1 cup (240 ml)

Instructions

  1. Prepare your ingredients by gathering and chopping any vegetables.
  2. Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper.
  3. Combine the browned beef with taco seasoning, diced tomatoes, black beans, corn, elbow macaroni, and water or beef broth in the crockpot.
  4. Set the crockpot to cook on low for 4-5 hours or high for 2-3 hours, stirring occasionally.
  5. About 30 minutes before serving, add softened cream cheese and stir until melted, then top with shredded cheddar cheese and let it melt.
