A delightful dessert that combines rich dark chocolate with tart cranberries and a refreshing orange glaze.

- 1 ½ cups (190g) all-purpose flour
- ½ cup (45g) unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) milk
- 1 cup fresh or dried cranberries
- ½ cup (90g) dark chocolate chips
For the Orange Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh orange juice
- 1 tsp orange zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and dusting it with flour.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract and milk.
- Gradually add the dry ingredients to the wet mixture in three parts, alternating with the milk, mixing until just combined.
- Gently fold in the cranberries and dark chocolate chips.
- Pour the batter into the prepared cake pan and bake for 40-45 minutes. Check for doneness with a toothpick.
- While the cake cools, prepare the orange glaze by whisking together powdered sugar, orange juice, and orange zest until smooth.
- Once the cake is completely cooled, drizzle the orange glaze over the top and allow it to set before slicing.
Notes
- Ensure all ingredients are at room temperature for better mixing.
- Store the cake at room temperature for up to three days or refrigerate for up to a week.
- For longer storage, freeze the cake wrapped tightly for up to three months.
