Description

A delightful dessert that combines rich dark chocolate with tart cranberries and a refreshing orange glaze.


Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) milk
  • 1 cup fresh or dried cranberries
  • ½ cup (90g) dark chocolate chips

For the Orange Glaze:

  • 1 cup (120g) powdered sugar
  • 23 tbsp fresh orange juice
  • 1 tsp orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and dusting it with flour.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract and milk.
  4. Gradually add the dry ingredients to the wet mixture in three parts, alternating with the milk, mixing until just combined.
  5. Gently fold in the cranberries and dark chocolate chips.
  6. Pour the batter into the prepared cake pan and bake for 40-45 minutes. Check for doneness with a toothpick.
  7. While the cake cools, prepare the orange glaze by whisking together powdered sugar, orange juice, and orange zest until smooth.
  8. Once the cake is completely cooled, drizzle the orange glaze over the top and allow it to set before slicing.
