Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
- In a medium bowl, whisk together 2 1/4 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
- In a large mixing bowl, cream together 3/4 cup of softened unsalted butter, 1 cup of granulated sugar, and 1/2 cup of packed brown sugar until light and fluffy.
- Beat in 1 large egg and 1 teaspoon of vanilla extract until well combined, then gradually add the dry ingredients.
- Gently fold in 1/2 cup of rainbow sprinkles.
- Transfer the dough to the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes until the edges are lightly golden and a toothpick comes out clean.
- Let the cookie bars cool completely in the pan before slicing them into squares.
Notes
- Use jimmies or quins for sprinkles to avoid bleeding colors.
- Store in an airtight container for up to a week or freeze for up to three months.
- For gluten-free, substitute all-purpose flour with a gluten-free blend.
