Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (170 g)
  • 1 cup granulated sugar (200 g)
  • 1/2 cup brown sugar, packed (100 g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup rainbow sprinkles (plus extra for topping)
  • 1/2 cup unsalted butter, softened (115 g)
  • 2 cups powdered sugar (240 g)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  3. In a medium bowl, whisk together 2 1/4 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  4. In a large mixing bowl, cream together 3/4 cup of softened unsalted butter, 1 cup of granulated sugar, and 1/2 cup of packed brown sugar until light and fluffy.
  5. Beat in 1 large egg and 1 teaspoon of vanilla extract until well combined, then gradually add the dry ingredients.
  6. Gently fold in 1/2 cup of rainbow sprinkles.
  7. Transfer the dough to the prepared baking pan and spread it evenly.
  8. Bake for 20-25 minutes until the edges are lightly golden and a toothpick comes out clean.
  9. Let the cookie bars cool completely in the pan before slicing them into squares.

Notes

  • Use jimmies or quins for sprinkles to avoid bleeding colors.
  • Store in an airtight container for up to a week or freeze for up to three months.
  • For gluten-free, substitute all-purpose flour with a gluten-free blend.
  • For vegan, replace the egg with a flaxseed egg and use vegan butter.
