Description

A delicious cake that combines the warm flavors of ginger and the natural sweetness of dates, topped with a rich molasses glaze.


Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 150 g (3/4 cup, packed) brown sugar
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) milk
  • 200 g (1 1/2 cups) chopped dates
  • 1 teaspoon vanilla extract

For the molasses glaze, you will need:

  • 60 g (1/4 cup) unsalted butter
  • 60 ml (1/4 cup) molasses
  • 2 tablespoons brown sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, ground ginger, ground cinnamon, ground cloves, and brown sugar.
  3. In another bowl, beat the eggs and then add melted butter, milk, and vanilla extract. Mix until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined, then fold in the chopped dates.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the molasses glaze by melting butter in a saucepan, then stirring in molasses and brown sugar until smooth. Add milk if needed for consistency.
  7. Once the cake is baked, let it cool in the pan for 10 minutes, then transfer to a wire rack. Drizzle the molasses glaze over the cooled cake before serving.
