A delicious cake that combines the warm flavors of ginger and the natural sweetness of dates, topped with a rich molasses glaze.

- 200 g (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 150 g (3/4 cup, packed) brown sugar
- 2 large eggs
- 115 g (1/2 cup) unsalted butter, melted
- 120 ml (1/2 cup) milk
- 200 g (1 1/2 cups) chopped dates
- 1 teaspoon vanilla extract
For the molasses glaze, you will need:
- 60 g (1/4 cup) unsalted butter
- 60 ml (1/4 cup) molasses
- 2 tablespoons brown sugar
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, ground ginger, ground cinnamon, ground cloves, and brown sugar.
- In another bowl, beat the eggs and then add melted butter, milk, and vanilla extract. Mix until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined, then fold in the chopped dates.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the molasses glaze by melting butter in a saucepan, then stirring in molasses and brown sugar until smooth. Add milk if needed for consistency.
- Once the cake is baked, let it cool in the pan for 10 minutes, then transfer to a wire rack. Drizzle the molasses glaze over the cooled cake before serving.
Notes
- Medjool dates are recommended for their softness and sweetness.
- Adjust the spice levels according to your taste preference.
- Consider adding nuts or chocolate chips for extra texture.
- For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
