Instructions
- Wash the baby potatoes thoroughly and halve or quarter them for even cooking.
- In a separate bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Pour the marinade over the prepared potatoes and toss gently to coat evenly.
