  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Wash the baby potatoes thoroughly and halve or quarter them for even cooking.
  2. In a separate bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper to create the marinade.
