Ingredients
- Rolled oats: 3 cups (about 240 g)
- Almonds: 1 cup, chopped (about 150 g)
- Walnuts: 1 cup, chopped (about 120 g)
- Dried cranberries: 1 cup (about 150 g)
- Honey: 1/2 cup (about 170 g)
- Coconut oil: 1/4 cup (about 60 ml), melted
- Brown sugar: 1/4 cup (about 50 g)
- Vanilla extract: 1 teaspoon (about 5 ml)
- Salt: 1/2 teaspoon (about 3 g)
- Cinnamon: 1 teaspoon (optional, about 2 g)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, chopped almonds, chopped walnuts, dried cranberries, salt, and cinnamon (if using).
- In a separate bowl, whisk together melted coconut oil, honey, brown sugar, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients and stir thoroughly to coat.
- Press the mixture firmly into clusters using your hands.
- Spread the clusters evenly on the prepared baking sheet and bake for 20-25 minutes, stirring halfway through.
- Let the clusters cool completely on the baking sheet before breaking them into pieces and storing in an airtight container.
