Description

Jerk Chicken Pineapple Skewers are a delightful dish that combines the bold flavors of jerk seasoning with the sweetness of pineapple, featuring tender marinated chicken, juicy pineapple chunks, and colorful vegetables, all grilled to perfection.

Ingredients

  • Boneless Chicken Thighs: 500 grams (1 lb) cut into 2-inch pieces
  • Pineapple: 1 medium pineapple, peeled, cored, and cut into 2-inch chunks
  • Jerk Seasoning: 1/4 cup
  • Olive Oil: 2 tablespoons
  • Lime Juice: 1 tablespoon
  • Bell Pepper: 1 (red or yellow), cut into 2-inch pieces
  • Red Onion: 1, cut into wedges
  • Salt and Pepper: To taste
  • Skewers: Wooden or metal
  • Honey: 1 tablespoon (optional)
  • Other Vegetables: Zucchini, cherry tomatoes, or mushrooms (optional)
  • Fresh Herbs: Cilantro or parsley (optional)
  • Spicy Peppers: Sliced jalapeños or other spicy peppers (optional)

Instructions

  1. Marinate the chicken by mixing jerk seasoning, olive oil, honey, and lime juice in a bowl. Add chicken pieces and coat well. Cover and refrigerate for at least 1 hour or overnight.
  2. Prepare the pineapple by peeling, coring, and cutting it into 2-inch chunks. Set aside.
  3. Assemble the skewers by threading marinated chicken, pineapple, bell pepper, and red onion onto the skewers, alternating colors.
  4. Preheat the grill to medium-high heat. Cook the skewers for 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 75°C (165°F).

Notes

  • Always preheat your grill for best results.
  • Avoid overcrowding the grill for even cooking.
  • Baste skewers with leftover marinade while cooking for extra flavor.
  • Use a meat thermometer to ensure chicken is cooked safely.
