Ingredients
- Boneless Chicken Thighs: 500 grams (1 lb) cut into 2-inch pieces
- Pineapple: 1 medium pineapple, peeled, cored, and cut into 2-inch chunks
- Jerk Seasoning: 1/4 cup
- Olive Oil: 2 tablespoons
- Lime Juice: 1 tablespoon
- Bell Pepper: 1 (red or yellow), cut into 2-inch pieces
- Red Onion: 1, cut into wedges
- Salt and Pepper: To taste
- Skewers: Wooden or metal
- Honey: 1 tablespoon (optional)
- Other Vegetables: Zucchini, cherry tomatoes, or mushrooms (optional)
- Fresh Herbs: Cilantro or parsley (optional)
- Spicy Peppers: Sliced jalapeños or other spicy peppers (optional)
Instructions
- Marinate the chicken by mixing jerk seasoning, olive oil, honey, and lime juice in a bowl. Add chicken pieces and coat well. Cover and refrigerate for at least 1 hour or overnight.
- Prepare the pineapple by peeling, coring, and cutting it into 2-inch chunks. Set aside.
- Assemble the skewers by threading marinated chicken, pineapple, bell pepper, and red onion onto the skewers, alternating colors.
- Preheat the grill to medium-high heat. Cook the skewers for 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 75°C (165°F).
