Description

Lasagna soup is a delightful twist on the classic Italian dish, combining all the flavors of lasagna into a warm, comforting soup.


Ingredients

  • Ground beef: 1 lb (450 g)
  • Italian sausage: 1 lb (450 g)
  • Onion: 1 medium, diced
  • Garlic: 4 cloves, minced
  • Crushed tomatoes: 28 oz (800 g) can
  • Chicken broth: 4 cups (1 liter)
  • Lasagna noodles: 8 oz (225 g), broken into pieces
  • Ricotta cheese: 1 cup (250 g)
  • Shredded mozzarella cheese: 1 cup (100 g)
  • Grated Parmesan cheese: 1/2 cup (50 g)
  • Fresh basil: 1/4 cup, chopped
  • Italian seasoning: 1 tablespoon
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic for 3-4 minutes until translucent.
  2. Add ground beef and Italian sausage, season with salt and pepper, and cook for 5-7 minutes until browned.
  3. Stir in crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce to a simmer.
  4. Add broken lasagna noodles and simmer for 10-12 minutes until tender.
  5. Stir in ricotta cheese and heat through for 2-3 minutes. Serve topped with mozzarella, Parmesan, and fresh basil.
