Ingredients

- Vanilla extract: 1 teaspoon
- Fresh lemon juice: 1/4 cup (60 ml)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or lightly grease it.
- In a large mixing bowl, whisk together the dry ingredients.
- In another bowl, whisk together the wet ingredients.
- Pour the wet ingredients into the dry ingredients and fold gently.
- Add any extra poppy seeds or lemon zest if desired.
- Fill the muffin cups about two-thirds full with batter.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
