  • Poppy seeds: 2 tablespoons
  • Lemon zest: 2 tablespoons (from about 2 lemons)
  • Eggs: 2 large
  • Buttermilk: 1 cup (240 ml)
  • Vegetable oil: 1/2 cup (120 ml)
  • Vanilla extract: 1 teaspoon
  • Fresh lemon juice: 1/4 cup (60 ml)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large mixing bowl, whisk together the dry ingredients.
  4. In another bowl, whisk together the wet ingredients.
  5. Pour the wet ingredients into the dry ingredients and fold gently.
  6. Add any extra poppy seeds or lemon zest if desired.
  7. Fill the muffin cups about two-thirds full with batter.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
