Description

A delicious cake combining the rich flavors of maple syrup and sweet dates, topped with crunchy pecans.


Ingredients

  • 200 g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 150 g (3/4 cup, packed) brown sugar
  • 2 large eggs
  • 115 g (1/2 cup) unsalted butter, melted
  • 120 ml (1/2 cup) milk
  • 60 ml (1/4 cup) pure maple syrup
  • 1 teaspoon vanilla extract
  • 200 g (1 1/2 cups) chopped dates
  • 100 g (1 cup) pecans, chopped and toasted

For the pecan crunch topping, you will need:

  • 50 g (1/4 cup) pecans, chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soak chopped dates in hot water for 10 minutes, then mash lightly.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and brown sugar.
  4. In another bowl, beat eggs and mix in melted butter, milk, maple syrup, and vanilla extract.
  5. Fold the wet mixture into the dry ingredients until just combined, then fold in the soaked dates.
  6. Mix chopped pecans with brown sugar and melted butter for the topping.
  7. Pour the batter into a prepared cake pan, sprinkle with pecan topping, and bake for 40-45 minutes.
  8. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
