Description

Mini cheesecake bites are a delightful twist on the classic cheesecake, offering creamy goodness in bite-sized portions, perfect for parties or a sweet snack.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Fresh strawberries, blueberries, and raspberries for topping
  • Whipped cream (optional, for serving)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed.
  3. In a large mixing bowl, beat softened cream cheese until smooth, then gradually add powdered sugar and vanilla extract.
  4. Line a mini muffin tin with paper liners and press 1 tablespoon of the graham cracker mixture into each cup.
  5. Spoon cheesecake filling over the crusts, filling each cup about 3/4 full.
