- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Fresh strawberries, blueberries, and raspberries for topping
- Whipped cream (optional, for serving)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed.
- In a large mixing bowl, beat softened cream cheese until smooth, then gradually add powdered sugar and vanilla extract.
- Line a mini muffin tin with paper liners and press 1 tablespoon of the graham cracker mixture into each cup.
- Spoon cheesecake filling over the crusts, filling each cup about 3/4 full.
- Bake for 15-18 minutes until edges are set and centers are slightly jiggly.
- Let cool at room temperature for 10 minutes, then refrigerate for at least 2 hours.
- Top with fresh berries and whipped cream before serving.
Notes
- Store in an airtight container in the refrigerator for up to 3 days.
- Freeze for up to 2 months; thaw in the refrigerator overnight before serving.
