Ingredients

- 1 ¾ cups (220g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- ½ cup (115g) unsalted butter, softened
- ½ cup (120ml) molasses
- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) hot water
For the lemon glaze, you will need:
- 1 cup (120g) powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing and lining it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy. Beat in the molasses, then add the eggs one at a time, followed by the vanilla extract.
- Gradually mix in the dry ingredients, alternating with the hot water, until the batter is smooth.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the lemon glaze by whisking together the powdered sugar, fresh lemon juice, and lemon zest until smooth.
- Once the cake has cooled completely, drizzle the lemon glaze over the top and allow it to set before slicing.
