Description

Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (120ml) molasses
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) hot water

For the lemon glaze, you will need:

  • 1 cup (120g) powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing and lining it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy. Beat in the molasses, then add the eggs one at a time, followed by the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the hot water, until the batter is smooth.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the lemon glaze by whisking together the powdered sugar, fresh lemon juice, and lemon zest until smooth.
  7. Once the cake has cooled completely, drizzle the lemon glaze over the top and allow it to set before slicing.
