Ingredients
- Chickpeas: 2 cups canned or 1 cup dried (soaked and cooked)
- Onion: 1 large, finely chopped
- Garlic: 2 cloves, minced
- Carrots: 2 medium, sliced
- Zucchini: 1 medium, diced
- Red Bell Pepper: 1, chopped
- Diced Tomatoes: 1 can (14 oz)
- Vegetable Broth: 1 cup
- Olive Oil: 2 tablespoons

Instructions
