- 1 1/2 cups (180g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3 large eggs
- Zest of 2 oranges
- 1/4 cup (60ml) orange juice
- 1 tsp ground cinnamon
- 1/2 cup (60g) chopped almonds
- 1/2 cup (120ml) milk
For the glaze, you will need:
- 2 tbsp orange juice
- 1 tbsp powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the orange zest and orange juice.
- Gradually add the dry mixture to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined and fold in the chopped almonds.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40-45 minutes, checking for doneness with a toothpick.
- Once baked, cool the cake in the pan for 10 minutes, then transfer to a wire rack. Prepare the glaze by whisking together the orange juice and powdered sugar, and drizzle over the cake.
