Description

Ingredients

  • 1 1/2 cups (180g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3 large eggs
  • Zest of 2 oranges
  • 1/4 cup (60ml) orange juice
  • 1 tsp ground cinnamon
  • 1/2 cup (60g) chopped almonds
  • 1/2 cup (120ml) milk

For the glaze, you will need:

  • 2 tbsp orange juice
  • 1 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the orange zest and orange juice.
  4. Gradually add the dry mixture to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined and fold in the chopped almonds.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 40-45 minutes, checking for doneness with a toothpick.
  7. Once baked, cool the cake in the pan for 10 minutes, then transfer to a wire rack. Prepare the glaze by whisking together the orange juice and powdered sugar, and drizzle over the cake.
