- 200g (1 cup) dried apricots, chopped
- 250ml (1 cup) boiling water
- 1 tsp baking soda
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- Zest of 1 orange
- 180g (1 1/2 cups) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
For the Almond Glaze, gather these ingredients:
- 50g (1/2 cup) powdered sugar
- 1 tbsp orange juice
- 1 tbsp almond milk
- 1/2 tsp almond extract
And for the Apricot Syrup, you will need:
- 100ml (1/2 cup) water
- 50g (1/4 cup) apricot jam
- 1 tbsp orange juice
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- Sift together the all-purpose flour, baking powder, and salt in a mixing bowl and set aside.
- Cream the unsalted butter and brown sugar in another bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and orange zest.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the soaked dried apricots along with the soaking liquid.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the almond glaze by mixing the powdered sugar, orange juice, almond milk, and almond extract in a small bowl until smooth.
- Once the cake is out of the oven, pour the apricot syrup over it while still warm and let it soak for about 10 minutes. Drizzle the almond glaze on top before serving.
