Description

A delightful Orange Cranberry Spice Cake with a citrus glaze that combines warm spices and tart cranberries for a perfect dessert.


Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar, packed
  • 2 large eggs
  • ½ cup (120ml) orange juice
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1 cup (120g) fresh or frozen cranberries

For the Citrus Glaze:

  • 1 cup (120g) powdered sugar
  • 23 tbsp fresh orange juice
  • 1 tsp orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the baking pan.
  2. Mix the dry ingredients in a medium bowl.
  3. Combine the wet ingredients in a large bowl and cream together.
  4. Incorporate the dry ingredients into the wet mixture.
  5. Fold in cranberries and orange zest.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes.
  7. Cool the cake and drizzle with citrus glaze before serving.

Notes

  • Fresh cranberries are preferred, but frozen can be used.
  • Adjust spices according to personal preference.
  • For gluten-free, use a gluten-free flour blend.
  • For vegan, substitute butter with coconut oil and eggs with flax eggs.
