- 1 ¾ cups (220g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) light brown sugar, packed
- 2 large eggs
- ½ cup (120ml) orange juice
- 1 tsp vanilla extract
- Zest of 1 orange
- 1 cup (120g) fresh or frozen cranberries
For the Citrus Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh orange juice
- 1 tsp orange zest
Instructions
- Preheat the oven to 350°F (175°C) and prepare the baking pan.
- Mix the dry ingredients in a medium bowl.
- Combine the wet ingredients in a large bowl and cream together.
- Incorporate the dry ingredients into the wet mixture.
- Fold in cranberries and orange zest.
- Pour the batter into the prepared pan and bake for 35-40 minutes.
- Cool the cake and drizzle with citrus glaze before serving.
Notes
- Fresh cranberries are preferred, but frozen can be used.
- Adjust spices according to personal preference.
- For gluten-free, use a gluten-free flour blend.
- For vegan, substitute butter with coconut oil and eggs with flax eggs.
