- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3 large eggs
- 1/2 cup (120ml) plain yogurt
- Zest of 2 oranges
- 1 tsp vanilla extract
- 1/2 cup (50g) chopped pecans, plus extra for topping
- 2 tbsp orange juice
For the syrup, you will need:
- 1/2 cup (100g) sugar
- 1/2 cup (120ml) orange juice
- 1/2 tsp ground cardamom
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan, lining the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cardamom.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the yogurt, orange zest, orange juice, and vanilla extract.
- Gently fold in the dry ingredients until just combined, then fold in the chopped pecans.
- Pour the batter into the prepared cake pan and smooth the top. Sprinkle additional chopped pecans on top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack and pour the syrup over the top while still warm.
- Allow the cake to cool completely before serving.
