  • ¼ cup (60g) unsalted butter
  • ½ cup (100g) brown sugar
  • 1 can (about 8 slices) pineapple rings, drained
  • Maraschino cherries, for garnish (optional)
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Make the brown sugar caramel by melting ¼ cup (60g) of unsalted butter in the greased pan over low heat, then stir in ½ cup (100g) of brown sugar until smooth.
  3. Arrange the drained pineapple rings over the caramel in the pan and add maraschino cherries if desired.
  4. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together ½ cup (115g) of softened butter and ¾ cup (150g) of granulated sugar until light and fluffy.
  5. Add the eggs one at a time to the butter mixture, mixing well after each addition, then stir in the vanilla extract. Alternately add the dry ingredients and ½ cup (120ml) of milk to the mixture, mixing until just combined.
  6. Pour the batter over the arranged pineapple and caramel, smoothing the top. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 5-10 minutes before inverting it onto a serving plate.

Notes

  • For a crunchier texture, consider adding chopped walnuts or pecans over the caramel before adding the pineapple.
  • You can experiment with different fruits like peaches or cherries for a unique twist.
  • Ensure the caramel is not burnt by keeping the heat low and stirring until smooth.
