A delicious and moist Prune Hazelnut Cake drizzled with a warm spiced syrup, perfect for any occasion.

- For the Cake:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup prunes, chopped
- ¾ cup boiling water
- ½ tsp baking soda (for prunes)
- ¾ cup hazelnuts, toasted and roughly chopped
- For the Spiced Syrup:
- ½ cup (100g) brown sugar
- ½ cup (120ml) water
- 1 cinnamon stick
- 2 whole cloves
- 1 star anise
- 1 tbsp honey
Instructions
- Preheat your oven to 350°F (175°C) and toast the hazelnuts for 10-12 minutes.
- Prepare the prunes by soaking them in boiling water with baking soda for 10 minutes.
- Cream together the softened butter and brown sugar, then add eggs and vanilla.
- Mix the dry ingredients and gradually add to the wet mixture, then fold in prunes and hazelnuts.
- Pour the batter into a prepared cake pan and bake for 35-40 minutes.
- Prepare the spiced syrup by simmering the ingredients for 5 minutes, then stir in honey.
- Once the cake is baked, let it cool, poke holes in it, and drizzle the spiced syrup over it.
