A delightful twist on classic mashed potatoes, combining creamy Yukon Gold potatoes with the rich, sweet taste of roasted garlic.

- 2 pounds (900 g) of Yukon Gold potatoes
- 1 head of garlic
- 4 tablespoons (60 ml) of unsalted butter
- 1/2 cup (120 ml) of heavy cream
- 1/4 cup (60 ml) of extra virgin olive oil
- Salt and black pepper to taste
- Fresh herbs (such as chives or parsley) for garnish
Instructions
- Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes.
- Peel and chop the Yukon Gold potatoes into even-sized chunks, place in a pot, cover with cold water, add salt, and boil for 15-20 minutes until fork-tender.
- Drain the potatoes and let them sit for a few minutes. Transfer to a mixing bowl, squeeze in the roasted garlic, and add unsalted butter.
- Gradually stir in heavy cream and remaining olive oil until you reach your desired consistency. Season with salt and black pepper to taste.
- Spoon the mashed potatoes into a serving bowl, drizzle with extra olive oil, and garnish with fresh herbs before serving.
Notes
- Yukon Gold potatoes are recommended for their creamy texture.
- Adjust the consistency by adding more or less cream and olive oil.
- For a cheesy variation, stir in shredded cheese after mashing.
