- 2 bell peppers (1 red and 1 yellow), sliced into strips
- 1 medium zucchini, sliced into half-moons
- 1 red onion, cut into wedges
- 2 cups baby potatoes, halved (or use any small potatoes)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine sliced bell peppers, zucchini, red onion, and halved baby potatoes. Drizzle with olive oil and sprinkle with garlic powder, oregano, thyme, salt, and pepper. Toss until well-coated.
- Season the sausages with additional herbs or spices if desired.
- Spread the seasoned vegetables evenly on a baking sheet and nestle the sausages among them.
- Bake for about 25-30 minutes, checking that the sausages reach an internal temperature of 160°F (70°C). Stir the vegetables halfway through cooking.
- Remove from the oven and garnish with freshly chopped parsley or basil if desired. Serve warm.
