Description

A delicious loaf combining fresh apples, crunchy pecans, and warm spices, topped with a sweet maple glaze.


Ingredients

  • 2 medium apples, peeled, cored, and diced
  • 1 cup (120g) chopped pecans
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) milk
  • 1/4 cup (60ml) maple syrup, for glazing

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Peel, core, and dice the apples, and chop the pecans.
  4. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract and milk.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the diced apples and chopped pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick comes out clean.
  7. While the loaf is baking, warm the maple syrup in a small saucepan for the glaze.
  8. Once the loaf has cooled for about 10 minutes, transfer it to a wire rack and drizzle the warm maple syrup over the top.
