A delicious loaf combining fresh apples, crunchy pecans, and warm spices, topped with a sweet maple glaze.

- 2 medium apples, peeled, cored, and diced
- 1 cup (120g) chopped pecans
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup (60ml) milk
- 1/4 cup (60ml) maple syrup, for glazing
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- Peel, core, and dice the apples, and chop the pecans.
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract and milk.
- Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the diced apples and chopped pecans.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick comes out clean.
- While the loaf is baking, warm the maple syrup in a small saucepan for the glaze.
- Once the loaf has cooled for about 10 minutes, transfer it to a wire rack and drizzle the warm maple syrup over the top.
