Ingredients
Scale
- 250 g (2 cups) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 115 g (1/2 cup) unsalted butter, softened
- 150 g (3/4 cup, packed) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) milk
- 2 medium apples (about 240 g), peeled, cored, and diced
- 100 g (2/3 cup) golden raisins
- 50 g (1/3 cup) chopped walnuts (optional)
- 60 g (1/4 cup) unsalted butter (for glaze)
- 50 g (1/4 cup) brown sugar (for glaze)
- 1–2 tablespoons milk or cream (for glaze)
Instructions
- Gather all your ingredients and prepare the apples by peeling, coring, and dicing them.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and milk.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined. Fold in the diced apples, golden raisins, and walnuts.
- Pour the batter into a prepared cake pan and bake in a preheated oven for 45-50 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with optional glaze before serving.
Notes
- Choose firm and slightly tart apples like Granny Smith or Honeycrisp for the best flavor.
- Store leftover cake in an airtight container at room temperature or refrigerate in warm climates.
- For gluten-free options, substitute all-purpose flour with a gluten-free flour blend.
