Description

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 2 large eggs
  • 1/2 cup (120ml) plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/2 cup (60g) chopped walnuts

For the maple drizzle:

  • 1/2 cup (120ml) pure maple syrup
  • 1 tbsp unsalted butter
  • 1/4 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round or square cake pan by greasing it and dusting it with flour.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Peel and dice the apples and chop the walnuts, setting them aside.
  4. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the yogurt and vanilla extract.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the diced apples and chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake cools, prepare the maple drizzle by combining the maple syrup, butter, and cinnamon in a small saucepan over low heat until melted and combined.
  8. Once the cake has cooled for 10-15 minutes, remove it from the pan, place it on a serving plate, and drizzle the warm maple syrup mixture over the top before serving.
