A delightful and moist loaf made with sweet apples and chewy figs, enhanced with warm spices and a sticky glaze.
Ingredients

- 200 g (1 2/3 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 115 g (1/2 cup) unsalted butter, softened
- 150 g (3/4 cup, packed) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) milk
- 1 medium apple (about 120 g), peeled, cored, and diced
- 150 g (1 cup, chopped) dried figs
- 50 g (1/3 cup) chopped walnuts (optional)
For the sticky glaze, you will need:
- 60 g (1/4 cup) unsalted butter
- 100 g (1/2 cup) brown sugar, packed
- 2–3 tablespoons milk or cream
Instructions
- Prepare all ingredients by measuring and chopping as needed.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla and milk.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined. Fold in the diced apple, chopped figs, and walnuts.
- Pour the batter into a prepared loaf pan and bake in a preheated oven at 350°F (175°C) for 50 to 55 minutes, or until a toothpick comes out clean. Let cool before transferring to a wire rack.
Notes
- Choose sweet and slightly tart apples like Granny Smith or Honeycrisp.
- Use plump and soft dried figs for the best flavor.
- Store the loaf wrapped tightly to retain moisture.
- Can be frozen for longer storage; slice and wrap individually.
