Description

A delightful and moist loaf made with sweet apples and chewy figs, enhanced with warm spices and a sticky glaze.

Ingredients

Scale
  • 200 g (1 2/3 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 115 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup, packed) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml (1/2 cup) milk
  • 1 medium apple (about 120 g), peeled, cored, and diced
  • 150 g (1 cup, chopped) dried figs
  • 50 g (1/3 cup) chopped walnuts (optional)

For the sticky glaze, you will need:

  • 60 g (1/4 cup) unsalted butter
  • 100 g (1/2 cup) brown sugar, packed
  • 23 tablespoons milk or cream

Instructions

  1. Prepare all ingredients by measuring and chopping as needed.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla and milk.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined. Fold in the diced apple, chopped figs, and walnuts.
  5. Pour the batter into a prepared loaf pan and bake in a preheated oven at 350°F (175°C) for 50 to 55 minutes, or until a toothpick comes out clean. Let cool before transferring to a wire rack.

Notes

  • Choose sweet and slightly tart apples like Granny Smith or Honeycrisp.
  • Use plump and soft dried figs for the best flavor.
  • Store the loaf wrapped tightly to retain moisture.
  • Can be frozen for longer storage; slice and wrap individually.
