Description

Ingredients

  • 1 tsp baking powder

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (60ml) honey
  • 2 large eggs
  • 1 cup (120g) chopped apples
  • 1/2 cup (75g) chopped dates
  • 1/2 tsp vanilla extract

For the Cinnamon Cream, you will need:

  • 1 cup (240ml) heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Prepare the apples and dates by washing, peeling, and chopping them into small pieces.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the softened butter, brown sugar, and honey until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Fold in the chopped apples, dates, and vanilla extract. Gradually add the dry ingredients, stirring until just combined.
  5. Preheat the oven to 350°F (175°C). Pour the batter into a prepared 9-inch round cake pan and bake for 40-45 minutes.
  6. Check for doneness with a toothpick. Let cool slightly before transferring to a wire rack.
  7. For the cinnamon cream, whip the heavy cream with powdered sugar and ground cinnamon until soft peaks form.
