For the Cinnamon Cream, you will need:
- 1 cup (240ml) heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp ground cinnamon
Instructions
- Prepare the apples and dates by washing, peeling, and chopping them into small pieces.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream the softened butter, brown sugar, and honey until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Fold in the chopped apples, dates, and vanilla extract. Gradually add the dry ingredients, stirring until just combined.
- Preheat the oven to 350°F (175°C). Pour the batter into a prepared 9-inch round cake pan and bake for 40-45 minutes.
- Check for doneness with a toothpick. Let cool slightly before transferring to a wire rack.
- For the cinnamon cream, whip the heavy cream with powdered sugar and ground cinnamon until soft peaks form.
