Description

A delicious and moist cake made with apples and walnuts, topped with a sweet cinnamon glaze.


Ingredients

  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

  • 115 g (½ cup) unsalted butter, softened
  • 200 g (1 cup) packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120 g (½ cup) Greek yogurt or sour cream
  • 240 g (2 medium apples, about 2 cups), peeled and diced
  • 90 g (¾ cup) walnuts, chopped
  • 120 g (1 cup) powdered sugar
  • 23 tbsp milk
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare a 23 cm (9-inch) round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. Toss the peeled and diced apples and chopped walnuts together in a separate bowl.
  4. Cream the softened unsalted butter and packed brown sugar together until fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and Greek yogurt (or sour cream).
  5. Gently fold the dry mixture into the wet ingredients, then add the apple and walnut mixture, folding gently.
  6. Pour the batter into the prepared cake pan and bake for 40-45 minutes, checking for doneness with a toothpick.
  7. While the cake is baking, prepare the cinnamon glaze by whisking together the powdered sugar, milk, ground cinnamon, and vanilla extract until smooth.
  8. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely before drizzling the glaze over the top.

  • Choose firm and slightly tart apples like Granny Smith or Honeycrisp for the best results.
  • Store leftover cake wrapped in plastic wrap or in an airtight container at room temperature for up to three days.
