Description

Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup (90g) dark chocolate chips or chopped chocolate
  • 1/4 cup (60ml) milk
  • 1/2 cup (60g) powdered sugar (for toffee glaze)
  • 2 tbsp unsalted butter (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Mash the ripe bananas in a bowl until smooth.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream the softened butter and brown sugar together until light and fluffy, then add eggs, vanilla, and mashed bananas.
  5. Gradually add the dry mixture to the wet mixture, alternating with milk, and fold in dark chocolate chips.
  6. Pour half of the batter into the prepared pan, then spoon the remaining batter over it and swirl with a knife.
  7. Bake for 40-45 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack and drizzle with toffee glaze.
