- 1 cup (150g) pitted dates, chopped
- 1 tsp baking soda
- 1 cup (240ml) boiling water
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ¼ cup (25g) cocoa powder
- 1 tsp baking powder
- ¼ tsp salt
For the Cocoa Cream:
- ½ cup (120ml) heavy cream
- 2 tbsp (15g) cocoa powder
- 2 tbsp (25g) powdered sugar
- ½ tsp vanilla extract
Instructions
- Chop the pitted dates and sprinkle baking soda over them. Pour boiling water over the dates and let sit for 10 minutes.
- Cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time and mix well. Stir in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold this into the wet mixture, then stir in the softened dates and soaking liquid.
- Pour the batter into a prepared 8-inch square baking dish and bake at 350°F (175°C) for 35-40 minutes. Check with a toothpick for doneness.
- For the cocoa cream, combine heavy cream, cocoa powder, powdered sugar, and vanilla extract in a bowl and whisk until smooth.
- Once the pudding has cooled slightly, cut into squares, drizzle with cocoa cream, and serve.

- Use Medjool dates for the best flavor and texture.
