Description

A rich, moist, and indulgent dessert that combines the natural sweetness of dates with deep chocolate flavor, topped with a creamy cocoa sauce.


Ingredients

  • 1 cup (150g) pitted dates, chopped
  • 1 tsp baking soda
  • 1 cup (240ml) boiling water
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • ¼ cup (25g) cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt

For the Cocoa Cream:

  • ½ cup (120ml) heavy cream
  • 2 tbsp (15g) cocoa powder
  • 2 tbsp (25g) powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Chop the pitted dates and sprinkle baking soda over them. Pour boiling water over the dates and let sit for 10 minutes.
  2. Cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time and mix well. Stir in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold this into the wet mixture, then stir in the softened dates and soaking liquid.
  4. Pour the batter into a prepared 8-inch square baking dish and bake at 350°F (175°C) for 35-40 minutes. Check with a toothpick for doneness.
  5. For the cocoa cream, combine heavy cream, cocoa powder, powdered sugar, and vanilla extract in a bowl and whisk until smooth.
  6. Once the pudding has cooled slightly, cut into squares, drizzle with cocoa cream, and serve.

Notes

  • Use Medjool dates for the best flavor and texture.
  • Ensure all ingredients are at room temperature for better mixing.
  • Do not overmix the batter to maintain fluffiness.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
