Ingredients

  • 200 g (1 cup) brown sugar, packed
  • 2 large eggs
  • 240 ml (1 cup) buttermilk
  • 250 g (1 cup) chopped dates
  • 1 tsp vanilla extract
  • 150 g (3/4 cup) brown sugar
  • 60 g (1/4 cup) unsalted butter
  • 120 ml (1/2 cup) heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch (20 cm) cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, salt, ground ginger, ground cinnamon, and ground nutmeg.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the buttermilk and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Fold in the chopped dates.
  5. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
  6. For the caramel sauce, combine brown sugar, unsalted butter, and heavy cream in a saucepan over medium heat, stirring until smooth and bubbling. Remove from heat and stir in vanilla extract and a pinch of salt.
  7. Once the cake has cooled, drizzle the warm caramel sauce over the top and serve.
