- 60 g (1/4 cup) unsalted butter
- 120 ml (1/2 cup) heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch (20 cm) cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, salt, ground ginger, ground cinnamon, and ground nutmeg.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the buttermilk and vanilla extract.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Fold in the chopped dates.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
- For the caramel sauce, combine brown sugar, unsalted butter, and heavy cream in a saucepan over medium heat, stirring until smooth and bubbling. Remove from heat and stir in vanilla extract and a pinch of salt.
- Once the cake has cooled, drizzle the warm caramel sauce over the top and serve.
