  • 1 tsp baking soda
  • 100 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup) brown sugar, packed
  • 2 large eggs (approx. 100 g)
  • 1 tsp vanilla extract
  • 180 g (1 1/2 cups) all-purpose flour
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 100 g (1/2 cup) unsalted butter
  • 100 g (1/2 cup) brown sugar, packed
  • 120 ml (1/2 cup) heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Prepare the dates by chopping them and soaking in boiling water with baking soda for 10 minutes.
  2. Mix the batter by creaming together butter and brown sugar, then adding eggs and vanilla, followed by the dry ingredients.
  3. Bake the pudding by combining the soaked dates with the batter and pouring it into a baking dish, then baking at 175°C (350°F) for 30-35 minutes.
  4. Make the caramel sauce by melting butter, adding brown sugar, and then stirring in cream and vanilla until smooth.
