Description

A delightful Sticky Maple Walnut Cake that combines rich flavors and textures, featuring maple syrup, brown sugar, and crunchy walnuts, topped with a brown butter glaze.

Ingredients

Scale
  • 1 cup (240ml) maple syrup
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup (120g) chopped walnuts

For the Brown Butter Glaze:

  • ½ cup (115g) unsalted butter
  • ¼ cup (60ml) maple syrup
  • 2 tbsp (25g) powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round or square cake pan by greasing it and lining the bottom with parchment paper.
  2. In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and maple syrup.
  4. Gradually fold the dry ingredients into the wet mixture until just incorporated.
  5. Fold in the chopped walnuts until evenly distributed.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the brown butter glaze by melting the butter in a small saucepan over medium heat until golden brown and nutty.
  8. Stir in the maple syrup, powdered sugar, and vanilla extract into the brown butter until smooth. Drizzle over the warm cake after it has cooled slightly.

Notes

  • Use fresh walnuts for the best flavor.
  • Ensure the batter is thick but pourable; adjust with milk or flour as needed.
  • Consider adding chocolate chips for extra flavor or making a vegan version by substituting eggs and butter.
