Description

A warm, comforting cake that combines the rich flavors of maple syrup and crunchy walnuts, topped with a sweet caramel drizzle.


Ingredients

  • 1 1/2 cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120 ml) pure maple syrup
  • 1/2 cup (120 ml) milk
  • 1 cup (100 g) chopped walnuts
  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (60 g) unsalted butter
  • 1/4 cup (60 ml) heavy cream
  • 2 tbsp maple syrup
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and maple syrup.
  5. Gradually fold in the dry ingredients, alternating with the milk, until just combined.
  6. Fold in the chopped walnuts and pour the batter into the prepared cake pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
  9. For the caramel drizzle, combine brown sugar, butter, heavy cream, maple syrup, and salt in a saucepan and cook over medium heat until smooth.
  10. Drizzle the warm caramel glaze over the cooled cake and allow it to soak in before slicing.

Notes

  • Store leftover cake covered at room temperature for up to 2 days or in the fridge for up to a week.
  • Freeze the cake for up to 3 months, wrapped tightly in plastic wrap and aluminum foil.
